Urgent Uppinakai or Instant Pickle


Instant mango pickle or Dheeder Uppinakai is very famous in South Indian wedding food

You can make this pickle in 20 min with very minimal ingredients 




Ingredients 
  • Raw mango Chopped 2
  • Red Chilli Powder 5tsp
  • Salt 5tsp (adjust as per taste)
  • Sugar 1 tsp 
  • Dry fenugreek 1 tsp
  • Cooking oil 4tsp
  • Mustard 1 tsp
  • Turmeric 1tsp
  • Asafoetida pinch 
Method 
  • In a large bowl add chopped raw mango add salt
  • Keep this aside for 10 min
  • Meanwhile, take a small pan dry roast fenugreek seeds Till golden brown
  • make the fenugreek powder 
  • Now add chilli powder, fenugreek powder to mangoes and mix well and keep aside
  • In a small ladle add oil, once hot add Mustard seeds, Asafoetida and Turmeric 
  • Add this tadka to mango mixture 
  • Mix well
  • You can relish this pickle immediately 
  • Goes best with curd rice
