Instant mango pickle or Dheeder Uppinakai is very famous in South Indian wedding food
You can make this pickle in 20 min with very minimal ingredients
Ingredients
- Raw mango Chopped 2
- Red Chilli Powder 5tsp
- Salt 5tsp (adjust as per taste)
- Sugar 1 tsp
- Dry fenugreek 1 tsp
- Cooking oil 4tsp
- Mustard 1 tsp
- Turmeric 1tsp
- Asafoetida pinch
Method
- In a large bowl add chopped raw mango add salt
- Keep this aside for 10 min
- Meanwhile, take a small pan dry roast fenugreek seeds Till golden brown
- make the fenugreek powder
- Now add chilli powder, fenugreek powder to mangoes and mix well and keep aside
- In a small ladle add oil, once hot add Mustard seeds, Asafoetida and Turmeric
- Add this tadka to mango mixture
- Mix well
- You can relish this pickle immediately
- Goes best with curd rice
