Rice Ganji or Akki Ganji or Ganji Anna

Ingredients

½ cup rice ( I used red rice Rajmoodi) 

½ cup or more grated fresh coconut 

salt to taste

3 tbsp ghee

½ tsp jeera

¼ tsp mustard seeds


Method:

Wash the rice and keep it ready

Pressure cook rice with 4-5 cups of water or cook rice directly till it becomes soft

once the rice is half cooked add salt, cumin seeds, and coconut . Mix it. Add more water if needed.

Stir in between and add water if needed, add 1 tbsp ghee and until the rice is completely cooked and looks completely mashed.

The ganji is ready when the rice in completely mashed and cooked.

Heat 2 tsp ghee or cocnut oil in a kadai on medium heat. Once hot add mustard seeds, after it pops add jeera and Asfetoda Then turn off the heat and add this seasoning to ganji.


Serve this Ganji with pickle or as it is.

I love to eat with mango pickle 

You can serve Ganji with butter milk also 


Note :–

You can cook the rice with coconut milk as well. 

You can add tender coconut Ganji also along with cocnut
