Shenga Holige or Groundnut Holige


Ingredients :

Peanuts: 2 cups

Ellu or sesame seeds 2 Tbsp

Jaggery : 1/2 cup or to the taste

Cardamom powder: 2  

Wheat flour: 1 cup

All-purpose flour: 2  -3 tsp

Ghee: 1 sp

Oil : 1sp


Method :

  1. Take a vessel add a tsp of oil, heat it, turn off the burner. Now add wheat, all-purpose flour, a pinch of salt.
  2. Mix well, add water & knead it into the dough. Keep it aside for 20 mins.
  3. Dry roast the peanuts and sesame, let them cool.
  4. Powder the jaggery well.
  5. Peanuts can be used with skin or without skin, anything will do.
  6. Now grind peanuts coarsely, then add powdered jaggery to it
  7. Add sesame, cardamom powder, can add 1tsp of ghee its optional, mix well.
  8. Sprinkle little water so the mixture can be made into balls of lemon size, it should be smooth enough so it can be rolled.
  9. Now make small portions of dough, roll it and fill it with the balls.
  10. Next dust your fingers take a lemon sized dough from step 1. Make it like a bowl and place hoorana (stuffing ball) inside.
  11. Slowly push the hoorana or stuffing inside. Pinch and take out the extra dough.
  12. Make it flat and dust the flour.
  13. Roll it into a thin holige or obbattu.
  14. Heat an Iron pan or Tawa and transfer the rolled holige or obbattu on to the tawa carefully. Cook under high flame. Wait until you see bubbles here and there. You can apply little ghee on both sides.
  15. And then flip it and cook on the other side as well. Do not flip it too many times. Enjoy shenga holige with ghee and enjoy!!
