Vangi Bath


Ingredients 

  • Brinjal (Green) 6 
  • Uard Dal 1 tsp 
  • Channa Dal 1tsp 
  • Mustard 1 tsp 
  • Oil 4 tsp
  • Asfetoda pinch 
  • Turmeric 
  • Cooked Rice 1 cup 
  • Tamarind Pulp 2 tsp
  • Peanuts 1/4 cup
  • salt
  • curry leaves 
  • Vangi Bath Powder 3 tsp

Method

  • Cut and soak brianjals in turmeric water 
  • Heat 2 tablespoons peanut oil, in a pan or kadai. Add ½ teaspoon mustard, urad dal, channa dal, asfetoda curry leaves anf fry well 
  • Now add chopped brinjals without water and fry them
  • Add ¼ teaspoon turmeric powder. Also add salt as per taste.
  • Now add tamarind juice, ,mix well let it cook in low flame for 5 min
  • once the brinjal is soft add, vangibath powder, tsp of jaggery and give a mix
  • Now add cooked rice to brinjal masala and mix well with rice 
  • add some ghee on top
  • Serve vangi bath with raita

You can use any kind of brinjal of your choice
