Kashi halwa is a Karnatakas traditional sweet dish, made with Ash gourd, this is usually made in kannadigas wedding
Ingredients
- Grated Ash gourd 3 cups
- Sugar 1 cup
- Cardamom powder 1tsp
- Ghee 3 tbsp
- Cashew and almond hand full
- Saffron pinch
Method
- Squeeze grated ash gourd and remove excess water
- Now in a wide pan add ash gourd and start cooking in medium high flame
- Keep stiering, once it's cooked and water evaporated
- Add sugar and mix well
- Keep stiering, cook this for 15 more min
- Meanwhile, heat ghee in small ladle add almonds and cashews and fry well
- Add raisins and add this to ash gourd which is cooking
- Now add 2 tbsp ghee to it
- Add cardamom powder and saffron and mix well
- Let it cook for 5 more min and switch off the stove
- Serve halwa when it is hot
