Iyenger Bakery Potato Bun ( Aloo Buns)

Ingredients:
  • For the dough:
  • Plain flour – 2 cups
  • Dry yeast – 1 tbsp
  • Milk – ¼ cup
  • Water – ½ cup
  • Salt – 1 tbsp
  • Sugar – 1 tbsp
  • Milk Powder 1 tbsp
  • Butter – 4 tbsp or 60 grams, melted
For the potato filling:

Potato – 3-4
Onion – 1 large, chopped
Peas – ¼ cup
Oil – 2 tsp
Mustard seeds – ½ tsp
Cumin seeds – 1 tsp
Turmeric powder – ½ tsp
Curry leaves – 5-6
Green chilli –  or as per taste
Salt to taste
Lemon juice – 2 tbsp
Coriander leaves for garnish
Method:
To make the dough:
  1. Heat the milk until it is warm. Add yeast and sugar and mix well. Let it sit for 5-6 minutes until it becomes frothy
  1. In a large bowl, mix flour, milk powder and salt together. Add melted butter and milk-yeast mixture
  1. Gradually add water and combine the dough
  1. Transfer onto a flat surface and knead it until the dough is soft, smooth and pliable (8-10 minutes)
  1. Cover the bowl with a cling wrap and let it rest in a warm place for about 1 hour. The dough will be almost double in size after resting
  1. Punch the dough to remove the trapped air. Knead again for 2-3 minutes
  1. Divide the dough into 8 equal parts
To make potato filling:
  1. Boil the potatoes and lightly mash them. The mash shouldn’t have any big lumps in it, at the same time, have a little bit of small chunkey bite
  1. Boil peas in water until done
  1. Heat a kadhai. Add mustard seeds and let it splutter
  1. Add cumin seeds, curry leaves, green chilli, turmeric powder and ginger. Saute for a minute
  1. Add onion and fry until they are translucent
  1. Add potatoes, boiled peas, salt and 2 tbsp water. Mix well and simmer for 1-2 minutes
  1. Turn off the flame and add lemon juice and coriander leaves
To make the bun:
  1. Preheat oven at 180 deg C
  1. Take one part of the dough and spread it into a small disc using your hand
  1. Place 2 tbsp potato filling in the center
  1. Bring all the ends of the dough together, tuck and seal completely
  1. Carefully place the bun on a lined baking tray making sure the tucked side is facing down
  1. Repeat for the rest of the dough for 30 min
  1. Place the tray in the oven and bake for 20 minutes until the bun is golden brown
  1. Remove from oven and brush some butter on top
  1. Serve warm
