Curd kodubale or Mosru kodubale

Ingredients:

  • Buttermilk – 1 cup
  • cumin seeds – 1 tsp
  • green chili – 4-5,finely chopped
  • curry leaves 
  • coriander leaves 
  • asafoetida (hing) – 1/4 tsp
  • salt – as per taste
  • cooking oil – 2 tsp
  • rice flour – 1 cup
  • oil – for deep frying

Method:

  • Add 1 and a half cups of buttermilk into a pan and heat it on low flame.
  • Add a tsp of cumin seeds, green chili paste, chopped curry leaves, chopped coriander leaves, quarter tsp of hing or asafoetida and salt as per taste. Also add 2 tsp of cooking oil.
  • Stir well and let it boil on low flame. As soon as it stars boiling add 1 cup of rice flour and mix well.
  • Remove all the lumps and continue to cook on low flame until the mixture forms a dough-like consistency.
  • Turn off the flame and transfer the dough into a bowl.
  • While the dough is still warm knead it well and pinch small portions out of it.
  • Roll with your fingers and form kodubale.
  • Drop all the prepared kodubale into hot oil and deep fry on medium flame.
  • Serve Kodbale with with coconut chutney
