Curd kodubale or Mosru kodubale
Ingredients:
- Buttermilk – 1 cup
- cumin seeds – 1 tsp
- green chili – 4-5,finely chopped
- curry leaves
- coriander leaves
- asafoetida (hing) – 1/4 tsp
- salt – as per taste
- cooking oil – 2 tsp
- rice flour – 1 cup
- oil – for deep frying
Method:
- Add 1 and a half cups of buttermilk into a pan and heat it on low flame.
- Add a tsp of cumin seeds, green chili paste, chopped curry leaves, chopped coriander leaves, quarter tsp of hing or asafoetida and salt as per taste. Also add 2 tsp of cooking oil.
- Stir well and let it boil on low flame. As soon as it stars boiling add 1 cup of rice flour and mix well.
- Remove all the lumps and continue to cook on low flame until the mixture forms a dough-like consistency.
- Turn off the flame and transfer the dough into a bowl.
- While the dough is still warm knead it well and pinch small portions out of it.
- Roll with your fingers and form kodubale.
- Drop all the prepared kodubale into hot oil and deep fry on medium flame.
- Serve Kodbale with with coconut chutney
