Bakery Style corn capsicum Puff

The butter is put inside the dough, making a paton which is repeatedly folded and rolled out before baking. Its called common mans pizza
Ingredients:-

 2 cups All-purpose flour (Maida)
1 tsp. Salt
100 ml. Chilled water
160 gms. Unsalted Butter


Method:-

1. In a bowl, add flour, salt, 1 tbsp butter water and knead a dough.
2. Keep aside for 15 minutes covered with a damp towel.

3. Sprinkle flour on the counter and knead for 30 seconds.
4. Roll with a rolling pin in a rectangular shape 
5. Brush off the flour from the surface of the flattened dough. 
6. Apply butter on the dough leaving a gap of half an inch on both sides.

7. Fold the pastry as shown and brush off the excess flour.

8. Wrap with a cling wrap and refrigerate for 1 hour

9. After an hour, repeat steps 4 to 6 and refrigerated for 35-40 minutes.
10. Repeat the same for 4-5 times and refrigerate
11. After that flatten the dough again in rectangular shape and fold again without applying butter and refrigerate for 30 minutes. Repeat this step again two more times.

To Make Cron Capsicum Puff

For the filling:
  1. Capsicum 1 chopped
  2. Onion – 1 large, chopped
  3. Corn 1/2 cup
  4. Oil – 2 tsp
  5. Mustard seeds – ½ tsp
  6. Cumin seeds – 1 tsp
  7. Turmeric powder – ½ tsp
  8. Curry leaves – 5-6
  9. Red chilli powder–  or as per taste
  10. Salt to taste
  11. Lemon Juice
  12. coriander leaves
  13. Gram masala
  14. Sugar


Method 

  1. Boil corn and keep aside
  2. Heat a kadhai. Add mustard seeds and let it splutter
  3. Add cumin seeds, curry leaves, green chilli, turmeric powder and ginger. Saute for a minute
  4. Add onion and fry until they are translucent
  5. Add capsicum and fry
  6. Now add red chilli powder and garam masala 
  7. Add, boiled corn, salt and 2 tbsp water. Mix well and simmer for 1-2 minutes
  8. Turn off the flame and add lemon juice and coriander leaves
To Bake Puff

  1. Roll out the pastry dough into a rectangular shape and cut into 8 equal portions.
  2. With a moist finger moisten the edges and add the filling to it and seal it.
  3. Place the filled doughs on a baking sheet and brush them with some milk.
  4. Bake in a preheated oven at 220°C for 20 minutes.
