Akki Halbai or Rice Halwa

Ingredients:


  1. ¼ cup of rice
  2. ¾ cup jaggery powder/jaggery
  3. 1 cup grated coconut
  4. 2 to 3 cardamom
  5. 1 TBSP ghee
  6. 2 cup of water
  7. Greased plate
  8. Raisins  

Method:
  1. Wash and soak the rice for at least 3 to 4 hours.
  2. Then drain the water and grind it along with coconut and cardamom to a fine paste..
  3. Add enough water to grind. (use around 2 cups of water)
  4. Now take this coconut rice mix in a thick bottom pan.
  5. Add the jaggery, mix it and keep this on medium heat.
  6. Add raisins now 
  7. Keep stirring until it gets thick Add ghee at this point.
  8. When the mix starts to leave the pan like one ball, transfer it to onto the greased plate and spread it.
  9. When it is still warm, cut it to the desired shape and size using the greased knife.
  10. Relish it with ghee or just as it is!

NOTE:

If the jaggery needs to be cleaned, melt jaggery with some water and strain it.
You can make Halbai with Rava, Ragi and Wheat as well
You can replace jaggery with sugar or Palm Sugar
Raisins  are completely optional
