Here is a simple and quick and mouthwatering recipe of a pickle which is made from Mango Ginger. Mango Ginger is a unique spice which is a root, it resembles ginger but imparts fresh mango flavor.
Mango Ginger 200grm
Red chilli powder 2tsp
Salt 2tsp
Methi seeds : 1/4tsp
Mustard
Cooking oil
Turmeric
Lemon 1 big
Asafoetida (hing) , a generous pinch
How to make Instant Mango Ginger Pickle
To begin with, soak the (mango ginger) in water for 15 minutes. Clean the impurities well.
In a pan dry roast methi and mustard till it turns golden and powder (not fine powder)
Peel the skin of the mango Ginger and slice into thin round pieces. Add chili powder, turmeric, salt and grounded powder to the and mix well.
Take a pan, add cooking oil and once it is hot, add the hing powder. Add mustard and let it splutter.
Once the mustard splutters mix it with the sliced Mango Ginger mix. Add the lime juice.
Serve mango ginger pickle along with Curd Rice
